Spiced Zucchini
Soup
Ingredients:
1 medium White Onion, sliced
1T Olive Oil
Sea Salt
1T of Curry Powder
2 lbs of Zucchini, sliced
6c of Vegetable or Chicken Stock
Freshly ground Black Pepper
1/4c White Short Grain Rice
Directions:
In a large saucepan, cook the onion in the oil until translucent,
about 5 minutes. Add the curry powder and cook down for another
2 minutes. Add the zucchini, stock, pepper and rice and bring to
a boil. Reduce the heat to a medium low and cook for another 20
minutes.
Blend the soup in a processor or blender until smooth.
Serve with a dollop of yogurt on top.
