Warm Baby Spinach Salad
Ingredients:
1 lb fresh Baby Spinach
Juice from 1/2 Lemon
1t Olive Oil
2 cloves Garlic, minced
2 Zucchini, julienned
1/4c Walnuts, toasted
1& 1/2T Orange Juice concentrate
1/2t Salt
Directions
In a medium bowl, combine the baby spinach and the lemon juice.
In a sauté pan, sauté the garlic in the warmed olive oil about 30 seconds.
Add the juilenned zucchini for another minute or two until softened.
Add the walnuts and the orange juice concentrate.
Add the baby spinach for about 20 seconds, tossing enough just to wilt the greens.
Sprinkle with salt and pepper.
