Ingredients:
1c Fine or Medium Bulgur
1/2c Fresh Lemon Juice
1 bunch Scallions, finely sliced
3 bunches Parsely, finely chopped
1/2c Mint, chopped
3 ripe Tomatoes, seeded and chopped
6T Olive Oil |
Directions:
Place bulgur in a medium bowl and cover with water, about 30 minutes (or
until water is absorbed and grains are soft). Drain excess water
and return to bowl with 1/4c lemon juice, scallions, tomatoes, parsley,
and mint. Let stand for 30 minutes. Meanwhile, whisk 1/4 lemon juice,
olive oil, and salt together. Toss with the grain mixture.
Season with additional salt and pepper if necessary.
