Vegetable Stir Fry with Tofu
Ingredients:
5 Scallions, finely chopped
2 Garlic cloves, minced
1 inch fresh Ginger, minced
Red Pepper, cut into thin strips
Bok Choy, sliced thin
Mushrooms, sliced thin
Asparagus, cut
(or any mix of vegetables available)
Tofu, cubed
Canola Oil
Black Sesame Seeds
Directions:
Heat a skillet with canola oil and add scallions and garlic & ginger, cook for 2 minutes on medium heat, without browning.
Add vegetables in the order of cooking times, allowing for a minute in between additions.
Serve hot, sprinkle with sesame seeds.
