Breakfast Scramble
Ingredients
1 bunch of green onion, sliced
2T of Olive Oil
1T of chopped Garlic
1/2c diced Bell Peppers
1/2c sliced Mushrooms
1 lb, 8 oz of firm Tofu, drained and crumbled
2t of Curry Powder
1/2t of Chili Powder
1t of Turmeric
1T of fresh Tarragon (or 1/2 tablespoon of dried)
Salt & Pepper
Directions:
In a medium skillet, heat oil and sauté onions and garlic
over moderate heat until translucent.
Add mushrooms and peppers for another 5 minutes.
Stir in crumbled tofu, spices and 1/4 cup of water.
Cook over low heat for 3-5 minutes. Adjust seasonings and garnish
with fresh tarragon.
