| Rice Paper Salad Rolls
Ingredients:
12 Rice Paper Rounds (found in asian markets and specialty shops)
1 head of Soft Butter Lettuce
2 Carrots, shredded
1 Red Pepper, sliced thinly
3 Scallions, sliced lengthwise
1lb. Tofu, fried and cut into sticks
1/4c Fresh Basil, shredded
1/4C Fresh Cilantro, or mint, chopped
Directions:
Assemble all of the ingredients on a large plate so that everything
is readily accessible. Soak the rice paper rounds in warm water
to soften. Fill the center with a little bit of each ingredient,
leaving room to fold on all sides. Gently fold in and roll,
adding the sides so that the roll is perfectly enclosed by the end.
Cover with damp paper towels and plastic to keep them moist.
Dipping Sauce:
2T Lime juice
2T Chili Sauce
2t Brown sugar
Combine.
