| Healthy Spiced Rice Pudding
Ingredients:
1C Milk (low fat)
1C Soft Tofu
2 Bananas, ripe
1/3C Honey
1/2t Cardamom
1/2t Cinnamon
1/2t Salt
1t Vanilla
1t Fresh Lemon juice
2c Short Grain Brown or White Rice, cooked
Toasted Almonds (slivered)
Directions:
Preheat oven to 350 degrees. Place milk, tofu, bananas, and honey
in blender until smooth. Add spices, salt, vanilla, and lemon juice.
Blend again. Combine tofu mixture and rice in a bowl. Spread pudding
into a baking dish, sprinkle with almonds and bake until browned
on top.
