Baked Polenta with Wild Mushrooms

Ingredients:

5c water or Vegetable Broth
2c Polenta or Cornmeal
1T Salt
6 cloves of Garlic, minced
1 Onion, finely chopped
1t Olive Oil
4c wild Mushrooms (a mix is fine)
Black Pepper
1/3c fresh Basil

Directions:

Preheat oven to 350 degrees.

Bring 5 c water or broth to a boil.

In a separate saucepan, mix 3 c boiling water with polenta and salt. As the polenta mixture heats, whisk in additional water.

Cook over low heat continuing to whisk about 5 more minutes or until the polenta is smooth.

In a sauté pan, add the oil, the garlic and the onion until softened and translucent.

Then add the mushrooms, pepper and basil and cook for about 5 more minutes.

Stir the cooked mushrooms into the polenta and pour into a greased pan.

Bake 15 minutes until golden on top.
