Mocha Walnut Cake

 

Ingredients:

3/4c of Toasted Walnuts, chopped
1/2c of Whole Wheat Pastry flour
1 1/4c of White Flour
1/4t of Salt
1/4c of instant Coffee Powder
3/4T Baking Powder
1/4c of Canola Oil
1/4c of Maple Syrup
1/4c of Brown Rice Syrup
1/4c of Soymilk
3/4c Apple Cider
1t of Vanilla

Directions:

Preheat oven to 350 degrees.

In a large bowl, combine the dry ingredients with the walnuts.

In a medium bowl, whisk the syrups with the oils until combined. Add the soymilk, cider, and vanilla. Add the wet mixture to the dry to combine.

Divide the batter into two well oiled and floured 9" cake pans. Bake for about 35 minutes.
