Chocolate Covered Macaroons
Ingredients:
3c Shredded Coconut
3/4c Sugar
6 Egg Whites
1 3/4t Vanilla
1/4t Almond Extract
9oz Semi-Sweet Chocolate
6T Cream
Directions:
Preheat oven to 300 degrees.
In a saucepan, mix coconut, sugar and egg whites over medium heat for 12 minutes. Remove from heat, add almond and vanilla extracts. Spread on a baking sheet and refrigerate for about 45 minutes.
Take 1/4 c of coconut mixture and make into a pyramid shape. Bake for 30 mins. Cool.
Melt chocolate and cream together, drizzle over cookies.
