Lentil Salad with Diced Vegetables
and Goat Cheese
Ingredients:
3c of cooked and cooled Lentils
2 finely Tomatoes, diced
1 small Red Onion, diced
1 bunch of Watercress, destemmed
1/4c fresh Parsley, chopped
1/4c Goat Cheese
Vinaigrette:
1 Garlic clove
1/4c red wine vinegar
3/4c Olive Oil
Salt & Pepper
Directions:
In a small bowl whisk together the vinaigrette ingredients.
In a larger bowl, combine the lentils, tomatoes, red onion, watercress
and chopped parsley. Combine with the vinaigrette until moist and
then fold in crumbled goat cheese. Taste and add additional seasoning
if necessary.
