Jicama, Orange and Red Onion Salad

 

Ingredients:

4 Naval Oranges
1 head of Butter or Romaine Lettuce
1 medium Jicama (peeled and cut into long matchsticks)
1 Red Onion, sliced thin

1/8c of Balsamic Vinegar
2 Garlic cloves, minced
1/4c of Olive Oil

Directions

Cut the outer peel of the oranges and cut the fruit out in sections, leaving the white pith. Tear the butter lettuce (or chop the romaine).

Combine the vinegar and the garlic, drizzle in the olive oil and whisk to emulsify.

Pile the lettuces on each plate and top with supremed orange slices, jicama and sliced red onion. Drizzle with vinaigrette.
