Green Bean Salad with Cherry Tomatoes, Pickled Red Onion and a Radish Dressing

 

Ingredients:

5 Radishes, trimmed & chopped
1/2c of Olive Oil
2T of Vinegar (Red Wine or Sherry)
1T of Mustard (a sweet yellow one)
1/2t of minced Garlic

1 pint of Yellow or Red Cherry Tomatoes
1 1/2 lbs of Greens Beans
1 Red Onion, sliced thin soaked in Vinegar to cover

Directions

Fill a large pot with water, add salt and bring to a boil. Add trimmed green beans and cook for about 5 minutes. Drain beans immediately and place under cool running water or an ice bath (to halt further cooking).

In a blender, place radishes, vinegar, mustard and garlic. Blend until combined and while blender is on, drizzle in the 1/2 cup of olive oil. Add salt & pepper.

In a large bowl, combine the cooled green beans, sliced cherry tomatoes and pickled red onions. Toss with radish dressing and serve.

Serves 4-6.
