Ginger Cinnamon Cookies

 

Yield: 2 dozen cookies

Ingredients:

1 2/3c flour
1t Baking Soda
1t of Cinnamon
3/4t Ginger
1/2t Nutmeg
1/4t Cloves
1/4t Cardamom
1/4t salt
1/8t pepper
1/2 lb butter, softened
1/3c dark brown sugar
1/4c maple syrup
1T vanilla soymilk

Directions:

Preheat oven to 350.

Grease a baking sheet or cover with parchment paper.

In a medium bowl, combine the flour, soda and spices.

In another bowl, using an electric mixer, whip the butter with the sugar, syrup and soymilk. Gently mix in the dry ingredients.

Roll into balls and bake for 20 minutes until golden.
