Chicken Fajitas

 

Ingredients:

4 boneless, skinless Chicken Breast halves
4T Canola Oil
1/4c Lime Juice
1T Garlic
1/4t Cayenne

8 6" Tortillas

1 Red Onion, sliced
1 Red Bell Pepper, sliced
1 Green or Yellow Bell Pepper, sliced

Directions:

Marinate chicken in lime juice, garlic and cayenne for about at least an hour or more.

Wrap tortillas in a 300-degree oven for about 10 minutes, turn off oven. Keep warm.

Warm a skillet over medium high heat and sauté onion about 3 minutes. Add bell peppers and sauté for 4 minutes longer or until softened. Remove from skillet and cover to keep warm. In the same skillet, add chicken. Sauté for about 4 minutes per side. Remove chicken, slice into strips.

Serve on a platter alongside cooked peppers and onions, salsa, guacamole and sour cream. Wrap everything in warm tortillas.
