Curried White Lentil Stew with Vegetables

 

Ingredients:

For the Lentils:
1/2t of Olive Oil
1 medium Onion
1 Garlic clove
1T of fresh Thyme
1c of brown or ivory Lentils
1t of Curry Powder
1T of Soy Sauce
3c of Vegetable or Chicken Stock

For the Vegetables:
1t of Olive Oil
1 medium Onion, diced
1 Celery rib, diced
1 Red Bell Pepper, diced
1 Tomato, diced
1/4 lb of Shitake Mushrooms, sliced
3 Garlic cloves
1T of fresh Oregano
1T of Soy Sauce

Directions:

To make lentils, warm oil and sauté the onion, garlic and thyme for 5 minutes.
Add the lentils, curry powder, soy sauce and stock. Bring to a boil and simmer about 45 minutes.

For the vegetables, heat the oil and sauté the onion, celery and pepper for about 5 minutes.
Add the tomato, mushrooms, garlic and oregano for about 2–3 minutes. Combine with the cooked lentils and season to taste with the soy sauce.
