Spicy Cucumber Ribbon Salad
4 cucumbers, unpeeled and halved
2 Carrots, julienne
1/4c Brown Rice Vinegar
1/4 Ume Vinegar
2t Sesame Oil
3t Brown Rice Syrup
1t Soy Sauce
2-inch piece of fresh Ginger, grated
6T of Black Sesame Seeds
Directions:
Slice the cucumbers lengthwise into ribbons and combine with julienne carrots.
In a small bowl, mix vinegars, oil, rice syrup, soy sauce and ginger juice to make the dressing.
Allow the cucumbers and carrots to marinate in the dressing about a half hour before serving.
Sprinkle with black sesame seeds.
Serve chilled.
