Couscous with Toasted Pistachios & Dried Cherries

 

Ingredients:

3/4c of Vegetable or Chicken Broth
1/2c Couscous
1/4c Dried Cherries (soaked in warm water for 15 minutes)
1/3c thinly sliced Scallion
1/4c shelled Pistachio Nuts
1T fresh Parsley
1 1/2T fresh Lemon Juice
1/4t Cinnamon
3T Olive Oil

Directions:

Bring the vegetable broth to a boil and stir in the couscous.

Remove pan from heat and let the mixture stand, covered, for at least five minutes.

Transfer the couscous to a bowl and stir in the cherries, the scallion, the pistachios, the parsley and a bit of salt.

In a small bowl whisk the lemon juice, cinnamon and the olive oil. Toss the couscous mixture with the dressing and season with salt and pepper.
