| Moroccan Couscous with Dried
Fruits and Pine Nuts with Citrus Dressing
Ingredients
1c Couscous
3c Water
1 Yellow Bell Pepper, finely diced
6 Dried Apricots, finely chopped
3T Golden Raisins
2T Currants
1/4c Pine Nuts (toasted)
2T Cilantro
Directions:
Place couscous in a heatproof bowl. Bring water to a boil and pour
only 2c over couscous. Shake to distribute evenly and cover. Allow
couscous to steam for 7 minutes. Remove cover, fluff with fork and
add additional 1c and cover for another 5 minutes. Fluff again and
add fruits, nuts, and cilantro. Toss with dressing (recipe below).
Citrus dressing:
1/2tsp Cumin
1/4tsp Cardamom
1/4tsp Cinnamon
1/4c Lemon juice
1/4c Orange juice
1T Fresh Ginger, minced
1T Honey
1/4c Olive Oil
Salt and Pepper
Except for the oil, combine all of the above in a blender. Turn
on blender and slowly add oil to emulsify. Adjust with salt and
pepper.
