Sweet Corncakes with Black Bean Salsa

 

Ingredients:

3c fresh or frozen Corn Kernels
1 small Red Onion, chopped
2 Eggs
1/2 Cilantro, chopped
1c White Flour
1t Baking Powder
Sea Salt
Freshly ground Black Pepper
Canola Oil
Black Bean Salsa (see recipe below)

Directions:

Place 2 cups of the corn, onion, eggs, cilantro, flour, baking powder, salt and pepper in the food processor or blender until well combined.

Pour batter into a bowl and stir in remaining 1 cup of corn.

Heat the fry pan at medium high heat with 1 tablespoon of canola or vegetable oil. When the oil is hot, drop 2 tablespoons of batter and cook for about 1 minute per side. Drain on paper towels and keep warm in the oven while making additional cakes.

Black Bean Salsa

Ingredients:

1c of Black Beans
1 Tomato, diced
2 cloves Garlic
1 small Red Onion, diced
1T Cilantro, chopped
2T of Lime Juice

Directions:

Mix to combine.
