Corn Soup

 

Ingredients:

1t Corn Oil
1 Onion, chopped
1 small Poblano Chili
3 Garlic cloves, smashed
1t ground Cumin
6 ears of fresh Corn
1 1/2c Chicken or Vegetable Broth
1 1/2c Low Fat Milk

Directions:

Chopped fresh cilantro (to garnish)

Heat oil in a medium size saucepan and add onions, chopped chili, smashed garlic and cumin. Sauté about 10 minutes, keeping the onions from browning.

Add corn kernels and the broth and simmer for about 45 minutes. Transfer to a blender or food processor and puree until smooth. Add milk to thin to a desired texture. Return to the saucepan and simmer to warm through. Add salt & pepper. Pour into bowls and garnish with cilantro.

Serves four.
