Chopped Salad with green goddess dressing

Ingredients

For the salad:
2 1/2c chopped romaine lettuce
3/4c chopped seeded tomatoes
3/4c chopped peeled jicama
3/4c chopped celery
1/4c chopped radish
3/4c fresh corn kernels
1 avocado, pitted, peeled, diced

For the dressing:
1c plain yogurt or soy yogurt
1/2c chopped fresh flat-leaf parsley
1/2c chopped fresh chives
2T chopped scallion greens
1t white-wine vinegar
1/4t minced garlic
salt and pepper

Directions:

In a large bowl, combine all the chopped vegetables and toss well. Set aside.

In a blender, combine the yogurt, parsley, chives, scallion greens, vinegar and garlic.

Blend thoroughly and season with salt and pepper as desired.

Toss the chopped vegetables with the green goddess dressing and serve.
