Chicken Satay with Peanut Dipping Sauce

 

Ingredients:

2 whole, skinless, boneless, Chicken breasts
1 package of skewers

Peanut Sauce
1/2c peanut butter
1/4c soy sauce
1/3c water
2T ginger minced
1 clove of garlic minced
2T red wine vinegar
1 1/2T sesame oil
2t honey
1/2t red pepper flakes

Directions:

Soak wooden skewers in water.

Combine the peanut sauce by hand or in a blender.

Separate the sauce — half for marinating purposes and half for serving with cooked chicken. Marinate chicken in sauce for 30 minutes.

Skewer and broil for 3 minutes per side.

Serve with reserved sauce on the side.
