Carrot Ginger
Soup
Ingredients:
1T Canola Oil
1 Yellow Onion sliced thin
1 1/2T sliced fresh Ginger Root
6 large Carrots, sliced
4c Vegetables
1/2c Soymilk
Salt & Pepper
In a large saucepan, heat oil and sauté onion until translucent.
Add ginger and sauté for 1 minute. Stir in carrots and add broth.
Bring to a boil, cover and simmer for about 40 minutes.
In a blender or a food processor puree the soup, adding the soymilk.
Return the mixture to the pot and season with salt and pepper.
