| Warm Red Cabbage Salad with
Pecans
Ingredients:
1 Garlic Clove, chopped
1T Sherry Vinegar
3T Olive Oil
1 Small Red Cabbage, quartered and thinly sliced
3oz Feta Cheese crumbled
1 Red Apple, chopped
1/4c Pitted Kalamata Olives
1T Parsley, chopped
1/2c Toasted Pecans
1 Red Onion sliced thinly
Directions:
Heat garlic, vinegar, and oil in a skillet. Add onion and cook
for about a half minute. Add cabbage and stir over high heat. Once
the leaves lighten, remove from heat and toss with the remaining
ingredients. Serve warm.
