Breakfast Burritos
Ingredients:
1t canola oil
1 yellow onion, diced
3/4 c tomatoes, chopped
1 lb soft tofu, mashed
1 t garlic, minced
1/2 t oregano
1/2 t cumin
1/2 t turmeric
1/2 avocado, sliced
3/4 c soy or cheddar cheese, grated
6 whole wheat tortillas
*Salsa or pico de gallo
Directions:
Heat oil in a skillet and saute onions until translucent.
Add tomatoes, tofu and spices; saute about 5 minutes.
Warm the tortillas in a low oven or dry skillet.
Spoon the filling into the center of each tortilla, along with sliced avocado, cheese and salsa (if desired).
Tuck the sides and roll into a burrito shape.
Eat warm.
