Beet, Arugula, Apple and Toasted Almond Salad

Ingredients:

1 lemon
3 large beets
2 granny smith apples
A few handfuls of baby arugula
1/4c of toasted almonds, slivered or chopped
2 carrots, peeled

Dressing

3 tablespoons of lemon juice
5 tablespoons of olive oil
salt & pepper

Directions:

Peel beets and slice into matchstick sized pieces.
Cut apples in similar shapes to the beets and sprinkle with lemon to keep from browning.
In a salad bowl, toss the beets and the apple together with the arugula.
Add carrot shavings and toasted almonds.
Whisk together the dressing and toss with the vegetables.
Serves 6.
