Basil Pesto

 

Ingredients:

4c of fresh Basil leaves
1/3c of Pine Nuts, toasted
2 Garlic cloves
1/2c grated Parmesan Cheese
1/4c of Olive Oil

Directions:

Bring a medium saucepan to a boil, drop in the basil for a couple of seconds and immediately place in ice water to halt further cooking.

In a blender or food processor, puree basil, pine nuts, garlic and parmesan cheese. Add olive oil and season with salt & pepper. Toss with warm pasta or stuff chicken breasts with pesto.

Makes about 1 1/4 cups.

*Pesto may alternatively be made substituting pine nuts with almonds, pecans or walnuts. The basil may be replaced with arugula or another bitter green. Experiment and have fun!
