Banana Walnut
Muffins
Ingredients
3c of mashed Bananas (about 6)
1c of Honey
1/2c of Canola Oil
1/2T Vanilla
3 1/2c Whole Wheat Pastry Glour
2t Baking Soda
1t of Baking Powder
1c of finely chopped Walnuts
1t ground Nutmeg
1t of Salt
Preheat the oven to 375 degrees. Oil muffin tins and set aside.
In a bowl, stir together the bananas, honey, oil and vanilla. In
another bowl, combine the flour, baking powder, soda, walnuts, nutmeg
and salt. Combine both and blend (be careful not to over mix!)
Fill tins with batter and bake about 30 minutes, until light brown.
