Banana Cashew Bars
Ingredients:
1/4c Safflower Oil
2 medium Bananas
1/2t Vanilla
1t Cinnamon
1/4t Cardamom
1/2c Cashews
1c dry, unsweetened Coconut
1/2c Oats
1 Apple, peeled and grated
Directions:
Preheat the oven to 375.
Blend the oil, bananas, vanilla, cinnamon and cardamom in a blender.
Add the cashews for a few seconds to break them up. Lastly, add the coconut, oats and apple.
Pour into a greased 9 inch baking pan. Bake for 25 minutes.
Allow to cool and cut into wedges.
Yield: 8 slices
