Double Baked Sweet Potatoes

Ingredients:

4 large Sweet Potatoes
2t Olive Oil
2 small Onions, finely chopped
1t Cumin
1t Coriander
8 white Mushrooms, chopped
dash of Soy Sauce to taste
2t dry Oregano
Sesame Seeds

Directions:

Preheat the oven to 375.
Bake whole potatoes about 40 minutes until soft.
Gently saute the onions in the olive oil about 5 minutes.
Add the cumin, coriander and mushrooms and saute another 5 minutes.
Add the soy and the oregano and remove from heat.
Cut each sweet potato in half lengthwise and gently scoop out the flesh.
Add the flesh to the onion mushroom mixture and mix well, adding more soy to taste.
Fill the potato skins with the mixture and sprinkle with sesame seeds.
Place back into the oven for 20 minutes and serve immediately.
