Baked Apples with Kashi and Raisins

Ingredients:

1/2c Kashi breakfast pilaf
1/4c Raisins
6 large Apples
1c natural Apple Juice
2T Honey or Maple Syrup

Directions:

In a small saucepan, combine the kashi, raisins and cinnamon with 1 & 1/4c water.

Bring to a boil and then reduce the heat to low and simmer covered for about 40 minutes.

Remove from the heat and set aside.

Preheat the oven to 350 degrees.

Core the apples, removing the seeds (keeping them whole) and slice 1/4 inch from the bottom so they are able to stand up straight.

Spoon the cooked mixture into the center of each apple.

Place in a baking dish and pour apple juice over the fruit, pouring the honey or maple syrup over the tops.

Cover with foil and bake apples for about 35 minutes until tender.
